German cuca with bananas

The cuca recipe originated in Germany and was brought to Brazil by German immigrants. Cuca is a cake made with light dough and stuffed with fruit, chocolate, or cheese. It is very popular in southern Brazil, where there is a large community of German descendants.


The recipe for cuca varies according to the region of Brazil. In the south of the country, cuca is most commonly made with a fruit filling, such as an apple, pear, plum, or banana. In the north of the country, cuca is most commonly made with a chocolate or cheese filling.

German cuca with bananas


 



ingredients for the dough:


300 g of rice flour (2 cups of tea)
200 g of sugar (1 cup of tea)
10 g of biological yeast (1 tablespoon)
50 g of butter at room temperature (2 tablespoons)
250 ml of warm milk (not hot)
zest of 1 lemon
1 pinch of salt
1 teaspoon of cinnamon powder
2 eggs
a rectangular baking pan n°2 or a bread pan greased with oil or butter



Dough preparation method:



In a bowl, mix the wheat flour, then add the biological yeast and stir. In another bowl, mix the sugar with the salt, stir well, and combine with the first mixture. Add the cinnamon powder, the lemon zest, the butter, the eggs, and the milk, and stir very well until you form a homogeneous mass, a soft bread dough. Pour it into the mold, spread it well until it covers the entire bottom, and let it rest for approximately 45 minutes or until it doubles in size.
Tip: You can mix everything in the mixer.


 


Ingredients for the filling:


5 chopped bananas
50 ml of lemon juice
1 teaspoon of cinnamon powder
2 tablespoons of sugar


How to prepare the stuffing:



Mix the banana, sugar, cinnamon powder, and lemon juice and set aside.


Ingredients for the farofa:


1 cup of sweet sprinkle tea
2 tablespoons of corn starch
1/2 cup of rice flour tea
1 cup of sugar (you can replace it with brown sugar or Demerara)
1 teaspoon of cinnamon powder
5 tablespoons of butter or margarine


How to prepare the farofa:


Mix the wheat flour, sugar, cinnamon powder, and butter; stir with your hands or with the help of a spoon until it forms a moist farofa.


Assembly:


After the dough has doubled in volume, spread the banana gently, covering the whole dough, then sprinkle the farofa gently so as not to lower the dough, covering the whole banana. Bake in a preheated oven at 180° for 35 to 45 minutes, or until lightly golden. And it's ready!
